There's a charm to the early DoA graphics that isn't seen in most older 3D stuff. I wonder what the secret is.

If by early graphics you mean something like >>102900, I think I know exactly what you mean and I heard the terms "Phong shading" and / or "Lambert shading" thrown around that seems to be related to that early 3D look you'd see in promotional renders and PS1 FMVs.
